AuTerroir premium wines from the 58° series are a promise of precision, quality, craftsmanship and uniqueness. Their pure taste brings out the essence: the distinctive terroir at Auggener Liesten with steep slopes, up to 58° we biodynamically vinified. This ecological and environmentally friendly development in such a steep slope is extremely rare and extraordinarily demanding. Our grapes Chardonnay, Pinot Blanc, Pinot Noir and Merlot are vinified in barrique and oak barrels, which makes them sophisticated character wines with noble aromas.
The vines of our top sites are on average over 30 years old, the oldest Pinot Noir vines are even over 70 years old. The combination of calcareous loamy soils, the warm winds of the Burgundian Gate, as well as the high humidity thanks to the slopes of the Black Forest Mountains, is very advantageous for healthy viticulture without artificial irrigation and gives the wines their soul.
And because nature has everything ready to bring dynamic wines with profile in the glass, it is our ambition to focus on the essentials in viticulture, breaking new ground: Our soils and sites are farmed 100% biodynamically and radically sustainably in balance with nature. In doing so, we pay particular attention to the gentle handling of our berries with the highest standards of craftsmanship.
For perfectly ripened grapes, we regulate yields to a maximum of 25-50 kg/ar. Harvesting is done by hand - staggered selectively - on time in small fruit boxes of 7-10kg, so that they remain in their natural shape and freshness until they are gently pressed. Our grapes remain strictly untreated and free of additives - from their unfolding to their filling.
In an idiosyncratic vision and a spirit of experimentation, we age our red wines Merlot and Pinot Noir in barriques, while our white wines Pinot Blanc and Chardonnay mature in 600 lt. oak barrels. This is our style for innovative natural wines with noble wood notes. Our goal is to produce honest wines with a wide range of aromatic profiles - that is why we do not add sulfur and let them ferment spontaneously. They are unfiltered, unfined and mature exactly as long in the barrel until they have developed their full flavor.
